I have one question regarding PCB edit, in the mixed signal course from Philip Salmony. should the top and the bottom layers be poured with copper (GND) for copper balance? or it would create issues?

It is best to balance the copper.
However, I do not know if a copper pour was used on only one outer layer.

yes while it is a good balance you should also consider that some components cant directly be placed on ground

You should place a keep-out area in the footprint then.
